Voor iedereen die altijd al warme citroentaart met frambozensaus voor ontbijt heeft willen eten: dit recept is voor jullie! Na flink wat geëxperimenteer heb ik namelijk het perfecte taart-ontbijt uitgevonden. Mag ik een applausje? Ok, misschien moeten jullie eerst zelf even het recept uitproberen…
Het hele baked-oats-concept was een beetje aan mij voorbijgegaan. Ik heb één keer banaan/ei/havermout pannenkoekjes gebakken en ik vond ze smerig. Die zak havermout stond dus al een hele tijd stof te vangen totdat ik twee weken geleden het recept van Budgetbytes voor blueberry baked oats tegenkwam en het spontaan besloot te maken. Ik vond het ‘ok’ maar van mij mocht het wel wat taartiger…
Koortsachtig begon ik te experimenteren en op een dag was het raak: de citroentaart met framboos-bosbessen-saus was geboren! Er zit veel goeds in zoals zaden, havermout en fruit. En zoals ik al zei: taart voor ontbijt!!! Meer hoef je toch niet te weten?
INGREDIËNTEN
Citroentaart:
1 geprakte banaan
sap én rasp van 1 citroen
1 cup havermout
1 ei
1/3 cup melk
1 eetlepel maanzaad
1 eetlepel honing
1/2 theelepel bakpoeder
1/2 theelepel vanille essence
snufje zout
optioneel: griekse yoghurt
Bosvruchtensaus:
1/2 cup frambozen
1/2 cup bosbessen
1/2 theelepel honing
Voor de taart: vet eerst een ovenschaal in met een beetje olie/boter/kokosvet/whatever en verwarm de oven voor op 180 graden. Kluts alle ingrediënten door elkaar in een kom en giet in de ovenschaal. Zet een half uur in de oven (totdat het midden van de taart niet meer nat is en stevig aanvoelt).
Voor de saus: doe de frambozen, bosbessen en honing in een kleine handmixer of blender en chop totdat er geen stukjes meer inzitten (of wel, jouw keuze).
Hopsakee, dat is ‘m al! Easy peasy! In het weekend kun je dit prima doen in de ochtend (hallo lazy sunday) maar je kunt er ook doordeweeks van genieten met één druk op de knop…
Snijd de cake in stukken en bewaar ze in een plastic bakje in de koelkast. De volgende ochtend wip je twee (of meer, jum) stukjes in een schaaltje, één minuutje in de magnetron, beetje saus eroverheen en genieten maar! Warme taart voor ontbijt waar je je niet schuldig over hoeft te voelen en waar je lang vol van zit door de havermout. Ik ben heel erg blij met deze vondst en ik hoop dat ik iemand met dit recept een fijne ochtend ga bezorgen.
